How to Make It: The outer surface of the tea leaves have a thicker “skin” when compared to machine-made Assam teas, because it has been hand-tossed in low heat for hours. To ‘crack the surface’ pour boiling water over the tea leaves, and immediately strain the water and throw it away. Now pour boiling water over the leaves to brew your cup. Use 2.5-grams of tea per 237 ml. of water (1 standard cup). Steep for 3 to 5 minutes, strain and enjoy! You can also use this tea for a second or third infusion. Simply pour boiling hot water over it, and steep for 5 to 10 minutes or leave it overnight in the refrigerator.
